Here's a list of extensions I've installed so far:

Sage
A lightweight RSS and ATOM feed aggregator.

Secure password generator
Helps to create secure passwords.

Gmail notifier
Shows you how many unread messages are in your Gmail account.

Google Preview
Inserts a website preview image in google search results.

IEview
Adds "View page in Internet Explorer" links to the content and link context menu. Handy for previewing pages in IE, loading up IE-only pages when you run across them in Mozilla, etc.

Linkification
Surrounds plain text URLs with anchor tags.

TinyUrl creator
Bring the http://tinyurl.com functionality into your browser.

I Personally am that much of a firefox nut myself i actually built my own extension mirror. http://hedonist-x.com. I have pretty much downloaded them all, i simply cant belive how much you can "customize" firefox, and some of the things you can make it do with extensions are near on incredable. :)
